Turkey and Rice Soup


Soups make great meals when you’re trying to lose weight. They’re filling, satisfying, and usually nutritious. This one is all three, plus it is low in calories and fat grams.

Start to Finish: 25 minutes

Makes: 6 servings (about 8 cups)

 

Ingredients:

2 14-ounce cans reduced-sodium chicken broth
1 1⁄2 cups water
1 teaspoon snipped fresh rosemary or 1⁄4 teaspoon dried rosemary, crushed
1⁄4 teaspoon black pepper
1⁄2 cup thinly sliced carrot (1 medium)
1⁄2 cup thinly sliced celery (1 stalk)
1⁄3 cup chopped onion (1 small)
1 cup quick-cooking rice
1⁄2 cup loose-pack frozen cut green beans
2 cups chopped cooked turkey or chicken (about 10 ounces)
1 14 1⁄2-ounce can diced tomatoes, undrained
Fresh rosemary sprigs (optional)

 

Instructions:

In a large saucepan or Dutch oven combine broth, the water, snipped rosemary, and pepper. Add carrot, celery, and onion. Bring to boiling.

Stir in uncooked rice and green beans. Return to boiling; reduce heat. Simmer, covered, for 10 to 12 minutes or until vegetables are tender. Stir in turkey or chicken and undrained tomatoes; heat through. If desired, garnish with rosemary sprigs.
